Spicy Chicken Panini



A delicious and satisfying sandwich featuring grilled spicy chicken, melted pepper jack cheese, and zesty sriracha mayo, all pressed between slices of bread and grilled to perfection.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 slices of sandwich bread
  • 4 slices of pepper jack cheese
  • 1/4 cup sliced jalapenos
  • 1/4 cup sliced red onion
  • 2 tablespoons mayonnaise
  • 2 tablespoons sriracha sauce
  • Butter for grilling

Instructions:

Preheat grill or grill pan to medium-high heat

In a small bowl, mix olive oil, paprika, cayenne pepper, garlic powder, salt, and black pepper

Brush chicken breasts with the spice mixture

Grill chicken for 6-7 minutes per side or until cooked through

Remove from grill and let rest for 5 minutes

While chicken is resting, mix mayonnaise and sriracha sauce in a small bowl

Spread the sriracha mayo mixture onto each slice of bread

Slice grilled chicken breasts into thin slices

Assemble sandwiches by placing slices of pepper jack cheese on two slices of bread

Top each with sliced chicken, jalapenos, and red onion

Place the remaining slices of bread on top to form sandwiches

Spread butter on the outside of each sandwich

Grill sandwiches in a panini press or skillet over medium heat until cheese is melted and bread is golden brown, about 4-5 minutes per side

Slice sandwiches diagonally and serve hot
