Hearty Beef & Barley Soup
This Hearty Beef & Barley Soup is a comforting dish, perfect for chilly days. Tender beef, wholesome barley, and aromatic vegetables simmered in flavorful broth create a cozy meal that will warm you up from the inside out.
Ingredients:
- 1 lb beef stew meat, cubed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup pearl barley
- 6 cups beef broth
- 2 cups water
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large pot, brown the beef over medium heat until well-seared
Remove and set aside
In the same pot, saut the onion, carrots, celery, and garlic until softened
Add the barley, beef broth, water, bay leaf, and browned beef to the pot
Bring to a boil, then reduce heat and simmer for 1 to 1
5 hours, until beef is tender and barley is cooked through
Season with salt and pepper to taste
Serve hot, garnished with fresh parsley
