Quinoa Tabbouleh Salad
A refreshing and nutritious Quinoa Tabbouleh Salad that combines the nutty flavor of quinoa with the freshness of vegetables and herbs. Perfect for a light and satisfying meal!
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- Salt and pepper to taste
Instructions:
Use cold water to rinse the quinoa
Mix quinoa and water in a saucepan
After it starts to boil, turn down the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the water is absorbed
Whisk the quinoa with a fork and set it aside until it's cool
Put quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint in a large bowl
Mix olive oil, lemon juice, salt, and pepper in a small bowl with a whisk
Add the dressing to the quinoa and toss it all together
Put it in the fridge for at least 30 minutes before serving so the flavors can mix
Add more mint leaves as a garnish before serving
