Neopolitan Cupcakes



If you like vanilla ice cream, these Neopolitan Cupcakes are a great way to change things up. They look nice and taste great. They have layers of vanilla, chocolate, and strawberry cake and colorful frosting on top. Great for any event or when you just want something sweet!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup strawberry puree
  • Red food coloring optional
  • 1/2 cup mini chocolate chips
  • 1/2 cup strawberry jam
  • 1/2 cup unsalted butter, softened for frosting
  • 3 cups powdered sugar for frosting
  • 1/4 cup whole milk for frosting
  • 1 tsp vanilla extract for frosting
  • Red and brown food coloring for frosting
  • Rainbow sprinkles optional, for decoration

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with cupcake liners

In a bowl, whisk together the flour, baking powder, and salt

Set aside

In another bowl, cream together the 1/2 cup of softened butter and granulated sugar until light and fluffy

Add the eggs one at a time, beating well after each addition

Stir in the vanilla extract

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients

Mix until just combined

Divide the batter into three equal parts

Leave one part as it is for the vanilla layer

In one part, mix in the unsweetened cocoa powder to create the chocolate layer

Add red food coloring if desired for a deeper color

In the third part, mix in the strawberry puree to create the strawberry layer

Adjust the color with red food coloring if needed

Place a spoonful of each batter vanilla, chocolate, and strawberry into each cupcake liner, layering them to create a Neopolitan effect

Sprinkle mini chocolate chips on top of each cupcake

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean

Allow the cupcakes to cool completely

To make the frosting, beat the 1/2 cup of softened butter until creamy

Gradually add powdered sugar, milk, and vanilla extract, and beat until smooth

Divide the frosting into three parts

Leave one part as it is for the vanilla frosting

In one part, add red food coloring for strawberry frosting, and in the other part, add brown food coloring for chocolate frosting

Pipe the three frosting colors onto each cupcake using a piping bag fitted with a large star tip

Finish with rainbow sprinkles for decoration
