Slow Cooker Ham & Lentil Soup
This ham and lentil soup made in a slow cooker is gluten-free and filling. It's great for cold days. With its protein-rich lentils and tasty ham, this meal is both filling and simple to make.
Ingredients:
- 1 lb gluten-free lentils, rinsed
- 1 lb cooked ham, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 cups gluten-free chicken broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Place lentils, ham, onion, carrots, celery, and garlic in the slow cooker
Add chicken broth, thyme, oregano, bay leaf, salt, and pepper
Stir to combine
Cover and cook on low for 8 hours or high for 4 hours, until lentils are tender
Discard bay leaf before serving
Garnish with fresh parsley if desired
