Indian Stuffed Potato Chaat
Ingredients:
- 6 medium-sized potatoes, boiled and peeled
- 1 cup boiled chickpeas
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 2 green chilies, finely chopped
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup tamarind chutney
- 1/4 cup mint-coriander chutney
- 1 teaspoon chaat masala
- 1 teaspoon roasted cumin powder
- Salt to taste
- Oil for frying
Instructions:
Cut the boiled potatoes in half lengthwise and scoop out the center, leaving a thin layer of potato flesh around the edges
In a bowl, mash the scooped-out potato flesh and mix it with boiled chickpeas, onion, tomato, green chilies, coriander leaves, chaat masala, roasted cumin powder, and salt
Stuff the potato halves with this mixture
Heat oil in a frying pan over medium heat
Fry the stuffed potato halves until they are golden brown and crispy on the outside
Drain excess oil on paper towels
Arrange the fried stuffed potatoes on a serving plate
Drizzle tamarind chutney and mint-coriander chutney over the stuffed potatoes
Garnish with more chopped onion, tomato, and coriander leaves
Sprinkle some chaat masala on top
Serve immediately as a delicious Indian Stuffed Potato Chaat
