Roasted Baby Turnips with Mustard Vinaigrette



Baby turnips that have been roasted have a sweet and earthy flavor that goes well with the tangy mustard vinaigrette. This vegan dish is easy to make and tastes great as an appetizer or side dish.

Ingredients:

  • 1 lb baby turnips, trimmed and halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons Dijon mustard
  • 1 tablespoon maple syrup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons chopped fresh parsley

Instructions:

Preheat the oven to 400F 200C

In a bowl, toss the baby turnips with olive oil, salt, and pepper until evenly coated

Spread the turnips on a baking sheet in a single layer

Roast in the preheated oven for 20-25 minutes or until tender and lightly browned, stirring halfway through

In a small bowl, whisk together Dijon mustard, maple syrup, and apple cider vinegar to make the vinaigrette

Once the turnips are roasted, transfer them to a serving dish

Drizzle the mustard vinaigrette over the roasted turnips

Sprinkle with chopped fresh parsley

Serve warm and enjoy!
