Keto Vegan Kale Caesar Salad



This vegan Caesar salad is a tasty keto-friendly take on the classic dish. It has nutrient-dense kale tossed in a creamy tahini-based dressing.

Ingredients:

  • 1 bunch kale, stems removed and leaves torn into bite-sized pieces
  • 1/4 cup tahini
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup hemp seeds
  • 1/4 cup sliced almonds, toasted optional

Instructions:

Rub the kale leaves in olive oil for a few minutes in a large bowl until the leaves get soft

Tahini, nutritional yeast, lemon juice, minced garlic, Dijon mustard, salt, and black pepper should all be mixed together in a small bowl with a whisk to make the dressing

The dressing should be poured over the kale and mixed well

Add toasted almonds and hemp seeds on top

Serve right away or put in the fridge to enjoy later
